They really DID like the beet quesadillas - part 2

Is it possible to start a veggie cult?  People keep approaching me at Jefferson High to tell me how good the Beet Quesadillas were that the RootDown youth leaders made way before the holidays.  Don't believe me?!  Luckily I had my camera on me today when Aurora, our super helpful campus aide, spoke her mind about those nasty little red roots...
